Drizzle olive oil in a saucepan over medium heat.
Add diced onion, stirring occasionally until onions are translucent.
Add the couscous and toast slightly for about 3-4 minutes.
Add water and pinch of salt, and bring the water to a boil.
Then cover the saucepan, reduce heat, and cook for 6-8 minutes.
Next, add butter, spinach, salt, and pepper to the saucepan.
Allow the spinach to wilt and stir to combine.
