Spinach Couscous

Course Side Dish

Ingredients
  

  • 1/4 cup onion, diced
  • 1 cup pearly couscous
  • 1 1/2 cups water
  • 2 handfuls baby spinach, roughly chopped
  • 2 Tbsp butter
  • 1 1/2 Tbsp lemon juice
  • salt and pepper

Instructions
 

  • Drizzle olive oil in a saucepan over medium heat.
  • Add diced onion, stirring occasionally until onions are translucent.
  • Add the couscous and toast slightly for about 3-4 minutes.
  • Add water and pinch of salt, and bring the water to a boil.
  • Then cover the saucepan, reduce heat, and cook for 6-8 minutes.
  • Next, add butter, spinach, salt, and pepper to the saucepan.
  • Allow the spinach to wilt and stir to combine.
