4th of July Dessert Pizza

Ingredients
  

  • 3/4 cup sugar
  • 1 stick salted butter, at room temperature
  • 1 tsp lemon zest, grated
  • 1 tsp vanilla extract
  • 1 egg
  • 1 3/4 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt

Cream Cheese Frosting

  • 8 oz cream cheese, at room temperature
  • 4 Tbsp salted butter, at room temperature
  • 1 tsp vanilla extract
  • 2 cups powdered sugar

Topping

  • 6 oz blueberries
  • 1/2 lb strawberries, sliced

Instructions
 

  • Preheat oven to 350°F and prepare baking dish with cooking spray. Use either a 9x13 inch baking dish or a pizza pan.
  • In a mixing bowl, beat together sugar and butter until light and fluffy for about 1-2 minutes. Beat in the lemon zest, vanilla, and egg. Mix in the flour, baking powder, and salt until just combined.
  • Press the dough into the baking dish in an even layer until the entire bottom of the dish is covered. Using a fork, poke holes in the dough to prevent it from bubbling up.
  • Bake the cookie dough for 15-18 minutes or until the dough is golden. Let cool in the pan on a wire rack for about 20 minutes.
  • You can remove the crust from the pan by using a butter knife to loosen the edges before inverting onto a platter or you can leave the crust in the pan for serving.
  • To make the frosting, whisk together cream cheese, butter, powdered sugar, and vanilla extract until fluffy about 2 minutes.
  • To assemble the dessert pizza, spread about half of the frosting on top of the pizza crust in an even layer leaving a slight border. Top of the pizza with fruit in your favorite pattern.
  • Place the remaining frosting in a piping bag with your choice of a tip. Pipe the frosting between the fruit stripes.
