Chocolatey and buttery Double Chocolate Shortbread Cookies are picture perfect dipped in chocolate and sprinkles!
Valentine’s Day is coming up and to me, it’s all about celebrating love. Love for a spouse or significant other, love for a child, or anyone that you love!
This Valentine’s Day make these Double Chocolate Shortbread Cookies for your loved ones (and yourself). These shortbread cookies are chocolate plus they get dipped into melted chocolate and sprinkles. Nothing is better than double chocolate, especially for Valentine’s Day!
I love that these shortbread cookies contain no eggs, in case you have little helpers in the kitchen! Also, shortbread cookies are crisp and buttery.
Ingredients
- 1 3/4 cups all-purpose flour
- 2/3 cup Dutch processed cocoa powder
- 1/2 teaspoon salt
- 3/4 cup plus granulated sugar
- 1 cup unsalted butter, at room temperature
- 1 teaspoon vanilla extract
- 1 cups semi-sweet chocolate chips, melted
- Sprinkles, for decorating
Instructions
- In the bowl of a stand mixer, cream together the butter and sugar for about 3 minutes until light and fluffy. Mix in the vanilla extract.
- Slowly add in the flour, salt, and cocoa powder and mix until combined.
- Using a piece of plastic wrap, roll the dough into a ball and then flatten to about 1/4-inch thick.
- Chill for 30 minutes.
- Preheat the oven to 350?F and line a large baking sheet with parchment paper.
- Roll out the dough if needed and using a heart shaped cookie cutter cut out the cookies. Place the cookies on the prepared baking sheet.
- Bake the cookies for 15 minutes. The cookies should be crisp and firm. Let the cookies cool on the baking sheet for two minutes and then transfer to a wire cooling rack to cool completely.
- Place chocolate chips in a microwave safe bowl and microwave in 30 second increments stirring in-between until the chocolate is melted.
- When the cookies are cool dip the hearts into the melted chocolate. Sprinkle the chocolate section of the cookie with sprinkles. Place the cookies on wax paper until the chocolate is set up.
