An easy-to-make side dish that the whole family will enjoy is spinach couscous.
I am always looking for vegetable side dishes to go with our main course. One of our favorites lately has been spinach couscous. It’s super easy and quick to make which makes it perfect to make during the busy work week. It gives us a much-needed vegetable for dinner and something the whole family will enjoy.
Spinach Couscous is an easy side dish and goes with a variety of meals. I usually pair it with baked fish or Panko-crusted BBQ chicken – recipe here.
This recipe is also a great way to use spinach that isn’t as crisp anymore since it will get cooked and wilt.
Spinach Couscous Recipe
Drizzle olive oil in a saucepan over medium heat. Add diced onion, stirring occasionally until onions are translucent. Add the couscous and toast slightly for about 3-4 minutes.
Add to the pan, water and a pinch of salt and bring to a boil. Then cover the saucepan, reduce heat and cook for 6-8 minutes. Next, add butter, spinach, salt, and pepper. Allow the spinach to wilt and stir to combine.

Ingredients
- 1/4 cup onion, diced
- 1 cup pearly couscous
- 1 1/2 cups water
- 2 handfuls baby spinach, roughly chopped
- 2 Tbsp butter
- 1 1/2 Tbsp lemon juice
- salt and pepper
Instructions

- Add water and pinch of salt, and bring the water to a boil.
- Then cover the saucepan, reduce heat, and cook for 6-8 minutes.
- Next, add butter, spinach, salt, and pepper to the saucepan.
- Allow the spinach to wilt and stir to combine.
