Red Velvet Cupcakes in a Jar are moist, soft cupcakes layered with rich, fluffy cream cheese frosting.
Valentine’s Day is all about love and showing your love for family and friends. I celebrate my daughter on Valentine’s Day as much as I celebrate my husband.
Both my daughter and husband love red velvet cakes and cupcakes so these red velvet cupcake in a jar are the perfect dessert for them. Having the dessert in the jars makes this look fancy and festive, but it is so easy!
After making the cupcakes, you will slice them into three sections and layer the cake and frosting in the jar. You can decorate the top of the cupcakes with sprinkles.
- 3⅓ cup flour
- ¾ cup butter, room temperature
- 2¼ cup sugar
- 3 large eggs
- 2 Tbsp liquid red food coloring
- 3 Tbsp unsweetened cocoa powder
- 1½ tsp. vanilla extract
- 1½ tsp salt
- 1½ cup buttermilk
- 1½ tsp white vinegar
- 1½ tsp baking soda
- 1 cup butter, room temperature
- 1 (8 oz.) pkg. cream cheese, room temperature
- ¼ tsp salt
- 2 tsp vanilla extract
- 4½ cup powdered sugar
- 1 Tbsp milk, plus more if needed
- Preheat oven to 350 degrees. Line a muffin pan with liners or spray with cooking spray and set aside.
- In the bowl of a stand mixer, combine butter and sugar until very light and fluffy, about 5 minutes.
- Add the eggs, beating well. Mix in the food coloring, cocoa powder and vanilla.
- Stir in the salt and buttermilk.
- Slowly add in the flour mixing in between additions. Add in the vinegar and baking soda.
- Fill cupcake liners ⅔ full with batter and bake in preheated oven for 17-18 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
- In a large bowl, mix together butter, cream cheese, salt and vanilla until smooth. Add powdered sugar, one cup at a time, beating after each addition.
- If frosting is too thick, add a little milk.
- Slice each cupcake into three equal sections. Layer in a jar cupcake slice, frosting, cupcake slice, frosting, cupcake slice and frosting. Top with sprinkles, if desired.
