Your whole family is going to love this easy, comfort dinner: One Skillet Cheesy Penne. Thank you, Skinner® pasta for sponsoring this delicious meal!
The Skinner pasta cooks right in the homemade tomato sauce so that the pasta absorbs all the delicious flavors. This dinner is easy to assemble any night of the week and one skillet means that it’s easy to clean up too with minimal dirty dishes…YES!
I used my favorite pasta again, Skinner, but this time I grabbed the penne. Why do I love Skinner pasta? It is consistent and always turns out right – never sticky and always firm which means I can feel confident feeding it to my family. Skinner pasta is also budget friendly, which I always appreciate when feeding guests. After all Skinner pasta is the #1 pasta in Texas!
Another great way to save time is by having your groceries delivered to your house. It is the ultimate lifesaver – you get to save time and you do not have to drag your kids to the store. Personally, I think I buy less because there is no impulsive purchasing. With that extra time by not visiting the grocery store, you have more quality time with your kids, spouse or more “me” time.
If you would like to try out having your groceries delivered to your home, Skinner® has partnered with Instacart in honor of National Friendship Day to provide free grocery delivery or $5 off your purchase* for customers in Houston, Austin, San Antonio and Dallas. Just buy one (1) package of Skinner pasta and get free grocery delivery. *Customers who don’t qualify for free delivery (e.g. Instacart Express Customers or first-time customers) will receive $5 off their order. Delivery must be $35 or more to qualify for free delivery or $5 off.
I ordered all my ingredients including Skinner pasta using Instacart from my local HEB (other options were available based on my zip code) and the process could not have been easier. I placed all the items that I wanted into my cart and chose the date and time (a one hour window) for delivery. Prior to my delivery, I received text messages telling me my personal shopper Lisa was pulling my items and when she was finished. I received another text when my delivery was on its way with Thomas, the driver, and along with the estimated delivery time. Communication every step of the way was great and my order was delivered timely – it was awesome!

One Skillet Cheesy Penne
- 1 tablespoon olive oil
- 1 yellow onion, diced
- 2 medium carrots, peeled and thinly sliced
- 1 green bell pepper, chopped
- 6-8 garlic cloves, minced
- 1 28 oz. can crushed tomatoes
- 1 15 oz. can diced tomatoes, drained
- 1 1/2 tsp sugar
- 1 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp dried parsley
- salt and pepper
- 2 1/2 cups chicken broth (or vegetable broth)
- 12 ounces uncooked Skinner Penne Rigate
- 1/2 cup half and half
- 1/2 cup freshly grated parmesan cheese
- 1 cup freshly grated mozzarella cheese
- Heat 1 tablespoon olive oil in a large nonstick, oven proof skillet over medium high heat. Add onions and carrots and saute.
- Add bell pepper and garlic and cook for 1 minute. Stir in crushed tomatoes, diced tomatoes, sugar, and all seasonings and bring to a simmer.
- Simmer gently uncovered for 10 minutes, stirring occasionally.
- Then stir in the chicken broth and pasta.
- Cover, increase heat to medium-high and cook at a simmer, stirring occasionally and replacing lid, just until the pasta is al dente, 12-14 minutes. Be sure to taste the pasta as it reaches the end of cooking to ensure you don’t overcook your pasta.
- Stir in the half and half until well combined.
- Top the pasta evenly with mozzarella and parmesan cheese. Transfer the skillet to the oven and broil until the cheese is melted and golden, 2-3 minutes (be sure to keep an eye on the oven).
- Let sit 5 minutes before serving.
