These No-Bake Breakfast Cookies are easy to make, while also being healthy, packed with protein and delicious!
When I told my daughter that I was going to make breakfast cookies, she told me she didn’t like them. However, while I was making them she asked me if the dough had egg in it and if not could she try the dough. I let her try a bite and then she asked if she could eat the leftover dough from the bowl when I was done scooping the cookies out. Then she asked me when are the cookies going to be ready and if she could have one. Hmm… I thought you said you didn’t like breakfast cookies?
Moral of the story always try something before saying you do not like it!
This no-bake breakfast cookies recipe combines peanut butter with honey, vanilla extract, oats and chia seeds. I added chocolate chips to the recipe to help appeal to my daughter, but they are optional. These cookies are easy to throw together in the morning and will keep in the fridge for up to a week (although I do not think they will stick around that long).
These breakfast cookies could also double as a better for you dessert option.
Ingredients
- 3/4 cup peanut butter
- 1 Tbsp honey
- 1 tsp vanilla
- 3/4 cup old fashioned oats
- 1 Tbsp chia seeds
- 1/4 cup chocolate chips (optional)
Instructions
- Place peanut butter, honey, and vanilla in a microwave safe bowl. Heat for 25 seconds in the microwave. Stir to combine.
- Add the oats, chia seeds, and chocolate chips to the bowl and mix.
- Using a cookie scoop form dough into balls and then flatten. Place on a wax paper lined tray.
- Refrigerate cookies for 1 hour to set up.
