Creamy, chocolatey and marshmallowy this Moon Pie Ice Cream is easy to make and a great way to cool off this summer!
When I think of Moon Pies it often reminds me of a full or new moon! Did you know that the first moon landing 50th anniversary happened this past weekend? I often wonder why we really haven’t been back since. Is it because there is nothing to explore or because of lack of funding or is it because our sights are set on going bigger and further? Whatever the reason I am excited to see the increase in space exploration in recent years.
When the temperatures start rising outside I start making homemade ice cream. We love trying new add-ins to our ice cream and making new creations. Last year we picked up a box of Moon Pies and ever since then I’ve been wanting to use some to make Moon Pie Ice Cream.
Homemade ice cream is very easy to make and only require a couple of ingredients: heavy cream, milk, vanilla extract, and sugar along with any ingredients that you want for add-ins. It is important when making homemade ice cream to keep all your ingredients as cold as possible. I even stick the mixing bowl in the refrigerator, so that it is cool for mixing.
Moon Pie Ice Cream
Mix together heavy cream, milk, sugar, and vanilla extract. Stir in cut-up pieces of Moon Pies. Pour mixture into your ice cream machine. Follow the directions on your machine for how long to churn. Ice cream will be soft right out of the machine. Place ice cream in an airtight container and freeze. Optional – serve with half of a mini Moon Pie on top. Enjoy!
Ingredients
- 2 cups heavy cream
- 1 cup milk (I use skim, but any will work)
- 1 Tablespoon vanilla extract
- 3/4 cup sugar
- 5 mini Moon Pies, cut into small pieces
Instructions
- Combine heavy cream, milk, vanilla extract, and sugar. Stir in cut-up pieces of Moon Pies.
- Pour mixture into your ice cream machine. Follow the directions for your machine for how long to churn.
