These Mediterranean Wraps feature a pita/tortilla stuffed with roasted vegetables, chickpeas, seasoned chicken, hummus, and a feta sauce.

We recently returned from a trip to Europe that included a week exploring Greece. We already loved Mediterranean food before our trip, but getting to eat gyros every day was the best! So when we returned from our trip I knew that we had to add a Mediterranean Wrap to our monthly meal plan.

We love these Mediterranean Wraps because they are easy to make and feature roasted vegetables along with seasoned chicken. The chicken is seasoned with za’atar spice which is a combination of a blend of thyme, oregano, sesame seeds, sumac, and sea salt.

Along with the chicken and roasted vegetables, these wraps include hummus (I buy mine just for ease of making dinner), lettuce, feta, and an easy homemade feta sauce (you could easily replace this with store-bought tzatziki sauce).

If you are looking to switch up your Mediterranean Wraps, you could replace the roasted vegetables with this Greek salad recipe which includes seasoned cucumbers, tomatoes, and onion.

I use this homemade tortillas recipe as the base for the Mediterranean Wraps, however, you can purchase pita or naan instead.

These Mediterranean Wraps feature a pita/tortilla stuffed with roasted vegetables, chickpeas, seasoned chicken, hummus, and a feta sauce.

Mediterranean Wraps Recipe

Preheat oven to 425 degrees F. On a small baking sheet, toss diced zucchini and halved cherry tomatoes with olive oil and season with salt, pepper, and za’atar spice. On another baking pan, toss chickpeas that have been patted dry with olive oil, paprika, and salt and pepper. Place both vegetables and chickpeas into the oven and bake for 16 minutes or until vegetables are slightly browned and softened and the chickpeas are crispy.

Meanwhile, heat olive oil over medium-low heat in a frying pan. Season diced chicken with za’atar spice, salt, and pepper. Add to the frying pan and cook until cooked through flipping after 5 minutes.

While the chicken cook, mash feta until in small pieces using a fork. Then combine with sour cream and lemon zest. Add a little bit of water at a time until the sauce is thinned and able to be drizzled.

Once everything is cooked, layer in a pita or tortilla hummus, lettuce, seasoned chicken, roasted vegetables, chickpeas, feta, and feta sauce. Enjoy!

Ingredients
  

  • 1 zucchini, diced
  • 4 oz cherry tomatoes, halved
  • 1 can chickpeas, drained and rinsed
  • 2 tsp za'atar spice
  • 1 tsp paprika
  • 12 oz chicken breast, diced
  • 1/2 lemon, zested
  • 1/2 cup feta
  • 2 Tbsp sour cream
  • olive oil
  • salt and pepper

Instructions
 

  • Preheat oven to 425 degrees F. On a small baking sheet, toss diced zucchini and halved cherry tomatoes with olive oil and season with salt, pepper, and 1 teaspoon za'atar spice.
  • On another baking pan, use a paper towel to pat dry the chickpeas before tossing them with olive oil, paprika, and salt and pepper.
  • Place both vegetables and chickpeas into the oven and bake for 16 minutes or until vegetables are slightly browned and softened and the chickpeas are crispy.
  • Meanwhile, heat olive oil over medium-low heat in a frying pan. Season diced chicken with za'atar spice, salt, and pepper. Add to the frying pan and cook until cooked through flipping after 5 minutes.
