This creamy, lemony pie is easy to make and requires no baking – like a faux lemon meringue pie.
I have always loved lemon meringue pie. When I was a teenager I used to make one at least once a month for my family. This lemon pie is the perfect dessert and full of tart lemon goodness and creamy topping.
Even though my husband claims not to like lemon meringue pie loved this lemon pie recipe which is similar without the meringue part. The lemon pie is creamy and so easy to make! If you want a complete no-bake pie use a graham cracker crust used of a pastry pie crust.
Lemon Pie
Bake your pie crust according to package instructions or use a graham cracker crust for a complete no-bake pie.
In a large saucepan, combine sugar and cornstarch. Whisk in the milk and lemon juice until combined. Cook over medium heat, stirring constantly until the mixture has thickened. Reduce heat to low and cook for 2 minutes.
Whisk in a small amount of the hot lemon mixture into your egg yolks before pouring into the pan. Continue stirring constantly until the mixture comes to a gentle boil. Then cook for 2 minutes. Stir in butter and lemon peel, then remove from heat.
Allow mixture to cool before stirring in sour cream. Then fill your pie crust with the filling and refrigerate until ready to serve. Before serving top with cool whip or homemade whipped cream.

- 3 Tablespoons cornstarch + 1 1/2 teaspoons cornstarch
- 1 cup milk
- 1/2 cup lemon juice
- 3 egg yolks, lightly beaten

- 1/2 Tablespoon grated lemon peel
- 1 cup sour cream
- 1 tub cool whip or homemade whipped cream
