Non-dairy milk alternatives have become huge in recent years. They are a great option for people with lactose intolerance, allergies, or who prefer to avoid animal products. Almond milk is actually very easy to prepare from scratch and much better for you than commercial nut milks because it isn’t full of additives such as preservatives and stabilizers. Homemade nut milk tastes completely different (and better) than commercially made.
I love to use almond milk in my coffee! Almond milk can be made in less than 10 minutes and can be stored in the refrigerator for 3-5 days. That means on busy mornings I can grab a cup of coffee on the way out the door.
Almond milk is so easy to make with my Vitamix. I have the Vitamix E310 Explorian Series Blender with Personal Cup Adapter. I use my blender for so many things from appetizers to smoothies to salsas. Since the Vitamix has 10 variable speeds I can get a smooth or hearty texture depending on what I am making.
Did you know that you can clean your Vitamix by just placing some dish soap and warm water in your machine and turning it on for 30 to 60 seconds? Seriously it cleans itself…YES!
Almond Milk
For best results make sure to use filtered water and raw almonds. This recipe can be scaled up or down using the same ratio. Or you can adjust the amount of water you add based on your taste. If you would like to add sweetness to your almond milk, try mixing in a little bit of honey.
Ingredients
- 1/3 cup raw almonds
- 1 cup filtered water + more for soaking
- nut milk bag
Instructions
- Place the almonds in a container with a tight fitting lid and cover with cold, filtered water. Water should be about an inch above the almonds. Place in the refrigerator and allow to soak overnight.
- Drain the almonds and give them a quick rinse.
- Place the almonds in a blender with 1 cup filtered water. Turn the blender on low for 20 to 30 seconds to chop the almonds, then slowly turn the mixer up to high speed and puree until the mixture is white and frothy.
- Place a nut milk bag over a large bowl. Pour the liquid into the bag and then thoroughly squeeze to separate the milk from the pulp.
Notes
1. Since homemade almond milk does not contain stabilizers natural separation will occur. Shake or stir before serving.
2. You can use the raw almond pulp in some baked goods or you can dry out the leftover almond meal.
3. You can substitute the almonds with other raw nuts including cashews, pistachios, macadamias, and hazelnuts.
