I don’t know about you but there are always nights that I need a quick dinner that pleases the whole family. Whether it’s coming home late from work, a quick dinner before sports practice or needing to feed a crowd during the holidays. One of my go to dishes is grilled burritos. Bonus points for this dinner because it makes so much that I freeze over half the recipe for another night!
Grilled Burritos
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can RO*TEL, drained
- 1 cup shredded cooked chicken
- 1 cup cooked rice
- 1 Tbsp chili powder
- 1 tsp cumin
- flour tortillas
- shredded cheese
- sour cream
- avocado, sliced
- PAM
- Stir black beans, corn, RO*TEL, shredded chicken, rice, chili powder and cumin together.
- Layer on a flour tortilla sour cream, shredded cheese, avocado, and chicken mixture. Fold the ends of the tortilla in and the sides of the tortilla. I use a little bit of sour cream to secure the sides closed.
- In a frying pan sprayed with PAM over low heat, grill the burrito until the tortilla is golden brown.
- Freeze leftover chicken mixture. To serve, defrost and reheat before adding to the tortilla.
