An easy-to-make side dish with lots of vegetables that the whole family will enjoy: Easy Vegetable Barley.
I am always looking for easy vegetable side dishes to go with our main course. One of our favorites lately has been this easy Vegetable Barley. It’s super easy and quick to make which makes it perfect to make during the busy work week and it pairs perfectly with fish or chicken.
This recipe gives us a much-needed vegetable for dinner and something the whole family will enjoy.
Easy Vegetable Barley is an easy side dish and goes with a variety of meals. I usually pair it with baked fish or Panko-crusted BBQ chicken – recipe here.
Vegetable Barley
Follow the directions on the package of your barley.
While your barley cooks, peel and grate the carrots. In a large bowl, whisk together honey, juice of one lime, and olive oil. Add the grated carrots and then season with salt and pepper. Stir until the grated carrots are coated. Let the carrots marinate for at least 10 minutes, stirring occasionally.
To a small blender or food processor, add cilantro, lime juice, water, olive oil, salt, and pepper. Blend until the cilantro is in little pieces and it’s mixed through.
Once the barley is cooked, add to the pot the spinach, carrots (including the liquid), and cilantro sauce. Stir until combined and season with additional salt and pepper to taste.

- 1/2 cup pearl couscous
- 1 lime
- 2 carrots, large
- 3 oz spinach
- 2 tsp honey
- 1 tbsp olive oil
- salt and pepper

- 1/2 cup cilantro
- 1/4 lime
- 1.5 tbsp water
- 1/2 tsp olive oil
- salt and pepper
