You know how they say some of your best memories are centered around food? Growing up we always had our favorite meals that regularly made appearances and many of my memories center around them. Most of our favorite dishes were Mexican, especially the Enchiladas Suizas that we had (and still have) every New Years Day. I attribute my mom’s delicious Mexican dishes to the 4 years she lived in Mexico and the numerous years she lived in Texas. I have my own family now and we still eat Mexican dishes several times a week.

After moving back to Texas, I am rediscovering myself and what makes me love this state so much! I am also rediscovering quality ingredients like LA MORENA® which is the leader in the chiles and peppers category for over 35 years. While moving back to Texas has been a goal it has also taken me outside of my comfort zone. I moved to a town I had never stepped foot in and bought a house I had only seen in pictures. It was a huge leap of faith and trust in my husband.
Let’s talk about one of my favorite meals to make for my family: Crock Pot Chicken Tortilla Soup. We all love it! The recipe makes a lot which is perfect if you have guests over or if you want two meals while only having to make it once. Plus it’s so easy to make and perfect for those days where you are not going to have time to make dinner in the evening!
You just dump all the ingredients into the crock pot and let it cook all day (makes your house smell amazing)!
- 1 can of black beans, drained and rinsed
- 1 can of corn, drained
- 2 cans of diced tomatoes
- 1/2 medium onion, diced
- 1/2 can of LA MORENA® Whole Jalapeños 28oz, sliced
- 2 chicken breasts
- 1 T cumin
- 1 T chili powder
- 1 T garlic powder
- 3 cups of chicken stock
- Shredded cheese
- Sour cream
- Diced avocado
- Tortilla Chips
- Dump chicken, black beans, corn, diced tomatoes, spices, LA MORENA® jalapeños, diced onions, and chicken stock in the crock pot. Then stir.
- Allow to cook 4 hours on high or 7 hours on low.
- Remove the chicken breasts and shred using two forks.
- Add the chicken back to the soup and stir.
- Serve with tortilla chips, shredded cheese, sour cream, and diced avocado.
