Now that the weather is starting to cooperate I am in the mood for comfort food. I love meals that I can cook in the crock-pot because I usually have time mid-morning to assemble our meal. Then when it is dinner time everything is all ready.
One of our family’s favorite comfort foods is chicken chili pie. A nice thick chili with plenty of flavor covering Frito chips and topped with shredded cheese and sour cream. For a little more flavor, you can add jalapenos too.
- 1/2 medium onion, diced
- 2 cans of diced tomatoes
- 1 can of kidney beans
- 1 can of black beans
- 2 cans of tomato sauce
- 2 boneless, skinless chicken breasts
- 2 teaspoons cumin
- 2 teaspoons chili power
- Frito chips
- Shredded cheese
- Sour cream
- Jalapenos, sliced (optional)
- Add all ingredients to the crock-pot and cook on low for 6 hours.
- Remove chicken breasts and shred using two forks, then return to the crock-pot.
- To serve, layer Fritos, chili, cheese, and sour cream.
- Enjoy!

I love using my crock pot this time of year, too. When all the kids come over for lunch after church on Sundays, I always have the main dish cooking away in the slow cooker. This will be a welcome addition to my Sunday lunches. Looks yummy!

I made regular chili a few weeks ago and it turned out great. I’ve tried to make chicken chili a few times but couldn’t get the taste just right. I’m going to shoot for it again after seeing your post.
I hope you enjoy this recipe. I don’t always keep the recipe the same…this weekend I made it and used pre-shredded chicken. I also frequently change out the cans of beans for whatever beans I have in the cupboard.
That looks delicious! We really like meals that we can eat from a bowl while sitting on the couch this time of year. So nice and cozy!

I think I discovered the wonder that is chili pie just last year. I’ve never tried making it, but this looks awesome and doable! :] (Hooray for crockpot recipes too!)
Yes! Chili Pie is so good and being able to cook in the crock-pot makes it even better.
