With the new year, I want to take time out of the day to focus on myself. I usually spend all of my time focusing on my family and end up feeling guilty if I am not working, cleaning, spending time with my daughter, etc. Do you feel this way too?
I am planning on waking up 30 minutes earlier during the week so that I can spend dedicated time for myself. I can spend my time reading, journaling, excersicing or just taking in the peacefulness of the morning before the busyness of the day overtakes.
When I was walking down the tea/coffee aisle at my local Walmart, I was excited to spot Bigelow Tea in Lemon Ginger. Bigelow Tea and cranberry banana muffins are the perfect complement to my morning time focusing on improving me. While I love drinking hot tea in the winter, I love that it is also easy to make ice tea by the glass with Bigelow Tea which is perfect to continue my morning tradition into the warmer months.
Cranberry Banana Muffins
These cranberry banana muffins do have a tartness to them from the cranberries. It is a delicious combination of tartness with the bananas. I love to make muffins for ease of serving, however you could use the same recipe and bake it as a loaf. Just increase your baking time to 55-60 minutes or until toothpick comes out clean.
- Cranberries
- 1 cup sugar
- 1 cup water
- 2 cups fresh cranberries
- Banana Mixture
- 1/4 cup melted butter
- 1 cup sugar
- 2 eggs
- 2 bananas (older bananas that are turning brown)
- 1 tsp. baking soda
- 2 cups flour
- Prepared cranberries
- In a sauce pan over medium heat, combine water and sugar. Once boiling, reduce heat and add fresh cranberries. Cook 5-7 minutes - the cranberries will begin to pop. Drain off liquid and set aside.
- Combine in a mixer, melted butter and sugar. Add eggs and bananas and combine. Then add baking soda and flour. Once combined, fold in the prepared cranberries.
- Pour mixture into prepared muffin pan (with liners or sprayed with cooking spray) filling the cups 2/3rds full.
- Bake at 350ยบ for 20 minutes.
