My daughter loves to help me in the kitchen and I enjoy being able to spend the extra time with her. Children can learn so much from helping in the kitchen plus they are learning vital skills for their future. By letting my daughter help in the kitchen, I am encouraging her and building her confidence. What she doesn’t know is that while she is having fun making dinner, cookies, cupcakes and more she is also learning how to read, how to follow directions, doing math and how to problem solve.
Rice is a frequent ingredient in our dinners, but I do not like having the little bits that stick to my pan after cooking rice. Uncle Ben’s Boil in Bag fixes that problem! Uncle Ben’s helps my family have quick and easy dinners during this busy time of year. One of my daughter’s favorite meals is Chicken Broccoli Rice. A combination of broccoli, chicken and cheese over rice.
- 1 bag of Frozen broccoli, cooked and chopped
- 4 chicken tenders, cut into bite size pieces
- 1/2 small onion, diced
- 2 cup shredded cheddar cheese
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 cup chicken broth
- 2 bags of Uncle Ben's Boil-in-Bag Enriched Long Grain Rice
- Cook diced onions in olive oil in a pan over low-medium heat.
- Then add bite size chicken pieces and cooked until cooked through.
- Cook Uncle Ben's Boil-in-Bag Rice according to package instructions.
- While the chicken cooks, cook frozen broccoli in the microwave according to package instructions and cut up into bite size pieces.
- Add broccoli and cheddar cheese to the chicken mixture. Season with salt and pepper and stir to combine.
- Serve chicken broccoli mixture over the top of the rice.
- Enjoy!

That sounds so lovely! I think it’s a great idea to add broccoli to the rice that kids will have a higher chance of eating them and with cheese and chicken, you definitely have a winner right there! How awesome!
