Does your family go strawberry picking in the spring/summer? We try to always make a trip to our local strawberry farm. We always pick a whole flat, so that we have lots of berries to freeze. Our local farm also has play equipment to entertain kids. We tend to hit the play equipment after the berries have been picked!
We love to eat strawberries fresh, make strawberry shortcake, freeze for smoothies and make jam. This year I decided to make cheesecake stuffed chocolate covered strawberries. Oh my! They are delicious!

These cheesecake stuffed chocolate covered strawberries are the perfect dessert any time this summer.
- 2 pounds of Strawberries, washed and pat dry
- 1 cup chocolate chips
- 1 8oz package cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla
- Wash the strawberries and pat dry with a paper towel. Use a melon baller to remove the stems and create a small whole in the strawberries for the cheesecake to sit. Set aside.
- Place the chocolate chips in a glass bowl that is big enough to sit on top of a small pot. Bring a pot of water to a boil (only an inch of water in the pot) and place the bowl of chocolate on top (create a double boiler). Use a rubber spatula to gently stir the chocolate chips until they are smooth and completely melted. Dip the bottom of each strawberry in the chocolates and place on a wax paper lined baking sheet.
- In a medium bowl, mix together the cream cheese, powdered sugar and vanilla until smooth. Place the cheesecake mixture into a piping bag or ziplock bag with the corner cut. Squeeze some of the cheesecake mixture into each strawberry.
- Let set in refrigerator until ready to eat.
