Do you go blueberry picking? We have a farm nearby that we enjoy visiting to pick blueberries and we also have a couple of our own bushes that we get quite a few blueberries off of. Blueberries are one of my favorite fruits! I’ve got a recipe for a classic dessert today: Blueberry Skillet Cobbler
After we pick blueberries during the summer, I love to freeze so that we can enjoy them all year long. It’s so easy to freeze blueberries, just wash and lay a single layer on a baking sheet and put the baking sheet into the freezer. Why a single layer? That way you do not end up with a pile of berries frozen together. Once the berries are frozen you can place them into ziplock bags and then back into the freezer until it’s time to be used.

- 3 cups blueberries
- 1 cup sugar
- ¼ cup cornstarch
- 1/2 cup all-purpose flour
- 1/2 cup sugar
- ½ cup butter, cut into cubes
- ½ teaspoon salt
- Place blueberries in saucepan on medium heat. Cover for 10 minutes, stirring often.
- Add in sugar and cornstarch. Turn heat down to low and simmer until mixture thickens. Remove from heat.
- Pour blueberry filling into a large cast iron skillet.
- Combine flour, sugar and salt. Cut in cubed butter until mixture is crumbly.
- Drop spoonfuls of mixture on top of blueberries.
- Line a baking sheet with aluminum foil incase the filling overflows. Place skillet on baking sheet.
- Bake at 400˚F for 20-25 minutes.
- Cobbler is done when the topping is golden brown.
- Optional: Top with your favorite vanilla ice cream.
