BBQ Chicken Tostadas
This recipe is a fun twist on a Mexican dinner. We love BBQ chicken in our house and it makes its way into many different dinners. This recipe is quick to make which makes it perfect to make for the big game so that you are not stuck in the kitchen! You could also make the chicken mixture and then refridgerate until serving time. Just reheat before adding to the top of the tostada.
- 2 cups of shredded chicken
- 1/4 of a small onion
- 1 can of Old El Paso mild green chilis
- 3/4 cup of BBQ sauce
- Old El Paso Tostadas
- Monterey Jack Cheese
- Cilantro
- Avocado, diced
- In a frying pan over low heat add olive oil and onions - cook until translucent. Add to the pan, shredded chicken, green chilis and BBQ sauce.
- While the mixture is heating, bake the tostadas in the oven according to the package instructions.
- To serve, layer tostada, chicken mixture, cheese, cilantro and avocado.
