We eat dinner at home almost every night even when we are limited on time. One dinner that I reach for often is open face chicken sloppy joes. When my family eats dinner, we have a no cell phone at the table rule. This helps us have no distractions at the table and allows us to concentrate on talking to each other about how our day was, what we want to do on the weekend, etc.
Open Face Chicken Sloppy Joes
3 cups of shredded chicken
1/4 small onion, chopped
1/2 tsp salt
1/4 tsp pepper
1 can of Manwich
Texas toast or sourdough bread
Sauté onions in olive oil until translucent. Add Manwich, shredded chicken, salt and pepper. Heat until warm over medium low heat. While the meat is heating, butter both sides of the Texas toast/sourdough bread and place on a warm griddle. Cook until golden brown. Top each Texas toast with chicken sloppy joe mixture.
*I make shredded chicken by adding fresh chicken breasts, diced onion, salt and pepper to a crock-pot and cover with water. Cook on high for 6 hours. Remove from crock-pot and shred using two forks. I store shredded chicken in sandwich/quart size baggies divided into 2 cup measurements and freeze.
