During the summer months, we spend every afternoon in the pool together as a family. It’s one of my favorite times as a family because we are together: talking, laughing, having fun and acting silly. It means we’ve slowed down and are focusing on each other.
By spending so much time in the pool together in the late afternoon, I am limited on the amount of time to dedicate to dinner. Red Baron pizza paired with Fried Zucchini Roll-ups is a great solution. Red Baron pizza is quick, easy and delicious. Fried Zucchini Roll-ups are perfect to pop into your mouth, they are kid friendly, easy to make and are just as good left over.
Red Baron pizza has been around for 40 years and it’s easy to see why with their Classic Crust that’s crispy, airy, flaky layers that’s not too thick and not too thin with a satisfying crunch. The same pizza that I ate as a child, I now serve to my own family! Come together over the timeless pizza!
Fried Zucchini Roll-ups
In the amount of time it took to preheat the oven and cook my Red Baron pizzas, I was able to make these Fried Zucchini Roll-ups. I love when dinner works out that way!
This recipe is great for the summer months since zucchini is widely available and you may even have some in your own garden.
To make, thinly slice the zucchinis. Dredge the slices in flour and then in eggs. Fry them until golden brown in canola oil, drain on paper towel and lightly salt. Once you have fried all the zucchini, roll each piece. Serve with lemon to squeeze over the top (or dip in ranch dressing – this is my husband’s favorite way to eat them).
- 2 small zucchini
- 1/2 cup flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 eggs
- Canola oil (or vegetable)
- Lemon, wedged
- Cut both ends of the zucchini and then thinly slice.
- Pour enough oil in bottom of pan to be 1/4 inch deep. Heat oil on medium.
- Combine flour, salt and pepper in a wide, shallow dish.
- Beat eggs in a separate wide, shallow dish.
- Dredge the zucchini slices in flour and then in egg.
- Fry zucchini slices until golden brown. Drain on paper towel and lightly salt.
- Once you have fried all the zucchini, roll each piece. Mine stayed rolled, but if you want you can use a toothpick.
- Serve with lemon to squeeze over the top.
Making an easy, yet delicious meal allows us to spend the time we need together as a family instead of time in the kitchen making dinner! It’s a win, win!
