Making easy meals at home is the key to helping me avoid ordering takeout or picking up fast food. When there never seems to be enough time in the evenings to get everything done, making time to spend as a family is so important me. This easy meal, Shrimp Po-Boy with Remoulade Sauce, makes the whole family happy. My secret for making this recipe quickly is using high quality SeaPakĀ® Popcorn Shrimp. A simple yet delicious meal where we can sit down at the table and discuss our day, what our favorite part was and/or make plans for the weekend.
Po-Boy
What is a po-boy? It is a traditional submarine sandwich from Louisiana that almost always consists of meat. A “dressed” po-boy has lettuce, tomato, pickles, and mayonnaise; with onions being optional. I remember my first time having a shrimp po-boy was in the French Quarter of New Orleans with my grandmother. It was love at first bite!
My Shrimp Po-Boy is served in a crusty hoagie piled high with lettuce, tomato, pickles, onions, SeaPak Popcorn Shrimp and homemade remoulade sauce drizzled over the top.
Shrimp Po-Boy
I used this coupon for $.75 off any SeaPak product when I went to Walmart to pick up all my ingredients. In the frozen food aisle, I grabbed a Party Size SeaPak Popcorn Shrimp and Coconut Shrimp (for another meal). Next, I choose my fresh produce including lettuce, tomatoes and onions and bread from the bakery.
Let’s pause to talk about SeaPak’s Coconut Shrimp. I do not think that I have ever tasted Coconut Shrimp that tasted this good and it came from the freezer section! The package also contained an Orange Marmalade dipping sauce.
To make a Shrimp Po-Boy, cook the SeaPak Popcorn Shrimp according to the package. While they are cooking, I combine mayonnaise, mustard, garlic, horseradish, hot sauce, sweet relish, paprika and cajun seasoning to make the remoulade sauce. Then I slice the tomatoes and onions and tear up the lettuce. To assemble a Shrimp Po-Boy, take the hoagie and layer it with lettuce, tomato, onions, pickles and SeaPak Popcorn Shrimp. Then drizzle the remoulade sauce over the shrimp and serve.

I have been curious about that shrimp for quite some time, but I didn’t know anyone who had tried it to get a review. I think I’m going to give it a shot now. This really does look good! Thank you for sharing at #MommyMeetUpMondays.
