I don’t know about you but I am always looking for quick, easy one-pot meals for my family. It’s hot here in the south, so I try not to use my oven much during the summer months. My Corn Shrimp Soup is the perfect recipe for summer and it’s low fat which is an added bonus! Great news! Swanson is giving away $3,000 worth of prizes, see below for details.
When I was shopping at Sam’s Club recently, I was so excited to see six-packs of Swanson Chicken Broth it was the perfect time to stock up and refill my pantry. I use Swanson Chicken Broth so much during the winter months, however, did you know that it is perfect for summer too? And it’s one of the ingredients in my delicious summer soup recipe…Corn Shrimp Soup.
I love to serve all my soups with a side of bread. Nice crusty rolls or flaky croissants are perfect for dipping which is one of my favorite parts of eating soup for dinner! My daughter who loves shrimp was a happy camper with dinner!
Corn Shrimp Soup
Saute celery, peppers and onion in a small amount of olive oil until tender. Stir in salt and pepper.
Add Swanson Chicken Broth, cream corn and half and half. Heat until hot, not boiling.
Add shrimp and cook until pink.
Stir cornstarch and water together and add to soup.

- 1/2 cup chopped onion
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 package of frozen cream corn
- 2 cups Swanson Chicken Broth
- 1 cup frozen shrimp (I used precooked)
- 1 1/2 cups fat free half and half
- 2 tablespoon cornstarch + 1/4 cup cold water

This reminds me of my favorite soup – Crab and Corn Chowder. I the crab may be the only difference besides the addition of potatoes. I hope the weather cools down soon…I’m ready for a big bowl of this! Entered!
