This creamy blueberry cheesecake ice cream is easy to make and a great way to cool off this summer!
Summer is here! It’s been so hot here in central Texas for the last few months and we have been eating lots of ice cream. Ice cream is always my go-to dessert during the summer months. Well, really I could eat ice cream every night! In fact, when I was little many nights we had ice cream for dessert.
We also really love cheesecake, so I knew that I wanted to combine the two to create a blueberry cheesecake ice cream. This recipe is easy to prepare and tastes amazing!
I tend to use fat-free half and half and skim milk instead of heavy cream and whole milk to reduce calories and fat. However, the whole fat milk and heavy cream will make your ice cream creamier.
Blueberry Cheesecake Ice Cream
In a large bowl, whisk together milk, half and half, sugar, and vanilla. Fill the ice cream maker with the mixture and run for 15-20 minutes.
While the mixture runs, combine in a mixer cream cheese, sugar, and vanilla. Then fold in the blueberries.
When the ice cream is done, swirl in the cream cheese mixture. Serve or freeze for later.
Tip: When making ice cream be sure to keep your cold ingredients in the fridge and your frozen ice cream insert in the freezer until you are ready to use.

Ice Cream Mixture
- 2 cups half and half
- 1 cup milk
- 3/4 cup sugar
- 1 tsp vanilla
Blueberry Cheesecake
- 1/2 block cream cheese, softened
- 1 1/2 Tbsps sugar
- 1/2 tsp vanilla
- 1/3 cup blueberries
Instructions
