I bake with pumpkin every fall; I just love the flavor so much! There is nothing better than a chocolate chip pumpkin muffin, a cup of coffee, and curling up on the couch with a good book.
I may speak from personal experience when I say that these chocolate chip pumpkin muffins are delicious for breakfast, lunch, dinner, or dessert. My daughter is also in love with these pumpkin muffins.
The warm spices pair nicely with the rich chocolate chips for the most delicious flavor combination. The flavor reminds me of the German chocolate-covered schoko-lebkuchen cookies – gingerbread type cookies. Which has always been a favorite of mine!
Chocolate Chip Pumpkin Muffins
Ingredients
- 1 1/2 cups flour
- 1 1/3 cups sugar
- 1 tsp baking soda
- 1 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp nutmeg
- 1/4 tsp allspice
- 1/4 tsp ginger
- 2 eggs
- 1 cup canned pumpkin
- 1/3 cup vegetable oil
- 1/3 cup water
- 1/2 cup chocolate chips
Instructions
- Combine all ingredients except the chocolate chips.
- Fold in chocolate chips.
- Then, pour the mixture into prepared muffin pan (with liners or sprayed with cooking spray) filing the cups 2/3rds full.
- Bake at 350 degress fro 25-30 minutes
