One thing I love about spring and summer is all of us fresh fruit available. My local supermarket had blueberries on sale this week so of course I had to pick up a ton. But then I had to decide on what to make with all these blueberries. I considered Blueberry Cobbler and Blueberry Banana Bread Muffins which both received votes from my family, however I really want to make something different. Therefore I decided on Blueberry Crumb Bars.
Blueberry Crumb Bars are easy to make and everything you need to make them are staples in your pantry or fridge (as long as you have blueberries).
These Blueberry Crumb Bars have a flaky buttery crust and the sweet, delicious blueberries pop in your mouth. The crumble on top is actually the extra crust, so there is no extra step to making these bars.
Blueberry Crumb Bars were a hit with the entire family including my daughter who is very hesitant to try them but fell in love with them.
- 2 1/4 cups flour
- 3/4 cup sugar
- 3/4 tsp baking powder
- 1/2 tsp salt
- 3/4 cup butter, cold, cut into Tablespoons
- 1 egg
- 3 cups fresh blueberries
- 1/2 cup sugar
- 3 tsp cornstarch
- 3 Tbsp lemon juice
- Preheat oven to 375˚ F and coat a 9x9 baking dish with baking spray.
- In a food processor, combine flour, sugar, baking powder, and salt. Then add butter and pulse until small crumbles appear. Add the egg and pulse until combined.
- Press 3/4 of the dough into the prepared baking dish.
- In a bowl, whisk together sugar, cornstarch, and lemon juice. Gently fold in the blueberries and coat evenly. Spread the blueberry mixture evenly over the crust.
- Crumble the remaining dough evenly over the blueberry layer
- Bake for 40-50 minutes or until the top is light golden brown. Cool the bars completely before cutting into squares. Cover and store leftovers in the refrigerator.
