Ingredients
- 1 stick salted butter, softened
- 1 1/4 cup granulated sugar, divided
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1 1/3 cup all-purpose flour
- 1 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup sour cream
- 16 ounces fresh strawberries, sliced
Instructions
- Preheat oven to 350˚F. Spray a 9-inch round cake pan with cooking spray.
- In the bowl of a stand mixer, combine the butter and 1 cup of sugar until fluffy.
- Beat in the eggs and vanilla.
- In a medium bowl, whisk together the flour, baking powder and salt. Gradually add the flour mixture to the butter mixture alternating with the sour cream. Beat until combined.
- Fold in the strawberries and spread the batter into the prepared pan.
- Sprinkle the top of the batter with the remaining 1/4 cup of sugar.
- Bake until a toothpick inserted in the center comes out clean, 35-40 minutes.
- Let the cake cool completely in the pan. Then slice and serve the cake.
