These delicious cookies go by so many different names including Mexican Wedding Cookies, Butterballs, Russian Tea Cakes, and Snowballs. What do you call these cookies?
My family has always made them during the holidays and call them Snowballs. This year I thought that I would switch up our usual Snowball and stuff them with chocolate chips. I am a huge fan of adding chocolate to almost anything!

Ingredients
- 1 cup salted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups flour
- 1 cup mini chocolate chips
- 1/2 cup powdered sugar (to roll cookies in)
Instructions
- Preheat the oven to 350˚ F and cover 2 baking sheets with parchment paper.
- In a bowl, combine the butter with powdered sugar, and vanilla. Beat with an electric mixer until light and fluffy. Gradually add the flour until well blended.
- Using a 1-inch scoop, indent the center and add a pinch of chocolate chips. Close the dough back around the chocolate chips and roll to form a ball. *Or mix the chocolate chips into the dough before forming.
- Place on the baking sheet and bake for 15 minutes.
- Cool on the baking sheet for 5 minutes before rolling the still warm cookies in the powdered sugar until they are evenly coated. Cool completely and enjoy!
